Obviously, this needs dissasembly, painting, re-wiring, etc. Anything I should be carefull of taking it apart?

Check with Paul Graves. At the Fall Workshop he had insulator material that could replace worn asbestos on those switches.  He can tell you about winding new nichrome on those switches, too.

Mostly I was worried about damaging anything before I take it apart, anything I need to try to save, etc. I already plan on getting Paul to work on this fan in the future.

Here's a link to a photo of the lollipop switch out of my fan.  I believe the thick wire loop on the top and the bottom and their connecting piece that runs vertical along the side of the tower -- you want to keep these intact. The thinner nichrome will connect to it. Under various screws are thin pieces of insulating paper -- like mica -- on the bottom of the switch. You'll probably want to keep that, too. It's fragile to handle so be careful with it.
