that switch that you've seen on your eskimo fan, your Mathes Cooler, and superfan, was also used on a lot of other fans as well like the Westinghouse PowerAire fans from the 1940s and 50s, as well as some Emerson fans and some Hunter fans as well, and many others that I can't think of off the bat. It was made by a competitor company to Cutler and Hammer who made and patented a very similar switch to that switch, made by quite possibly Leviton or Levolier, but not sure as those switches don't have a name on them that I ever saw of when I had one apart.
